Why has 'freedom of speech' become so restricted by political correctness ?

It isn't at all, you can say whatever you want to whoever you want, but so can everyone else so be prepared to be treated like a jackass if you're acting like one

Because political correctness is a form of censorship, and censors require some subjugation of free speech in order to carry out their policy of censorship.

It's because most modern lobbyist groups (at least the large ones) have turned into little more than organized mob thugs to beat opposition into submission. The majority of the time that there is public "outrage" over something some person said, it's not the public that is outraged. It's one of these groups that then devotes all of their time and money to manufacture public outrage to force that person/company/etc. to do what they want.

The owner of Chick-fil-A was accused of "homophobia" In fact, he said NOTHING about gay marriage, he was raked over the coals for something he didn't even say by the so-called tolerant, more gentle Democraps who even broke the law by denying him due process and an opportunity to conduct business. It's because dishonest Liberal Democrats ignore the law and their own hypocrisy in their lust for power and control and don't care who they hurt in the process.

The real purpose behind political correctness, liberals and their media choose to refer to entities in a way that is consistent with liberal political positions, outlooks and agendas. PC means that you must refer to entities consistent with liberal viewpoints or be considered the equivalent as racist.
as we all know, liberals are exploiting minorities for political gain, so liberals decided to refer to black people as African-Americans, to remind us they are victims of capitalists. So if someone refers to a black person as "black", the reference is racist because liberals demand you use the term they prefer. The way this is done, is through political correctness.
In the news if someone happens to be American, of Swedish descent, the person is not referred to as Swedish-American because Swedish people have no political value in liberal politics or agendas.
Political correctness, really is, by definition, pressure to use terms and references, consistent with liberal viewpoints. To defy PC is racism, to oppose liberal pressure is racism, to oppose liberals is racism.
For me, liberals can stick their PC bull $hit, straight up their sphincters.

Well because we are "free" to do things in a controled way !
Like you keep your dog in your garden free , well is it really free? ? Yes in the garden , no in the street so our freedon is in our goverments gardens only ! Not on their streets :)
