Can Americans easily cross into Mexico if they want to? What about backpackers from Europe who visit Texas? Can they cross over+return@will?

Whether you can cross the Mexican border depends on the passport you are travelling on. There was no problem with a UK passport, presumably the same applies to all EU passport holders.

But then, how do American and Canadian students backpack through Europe?? It may come as a surprise, but many backpackers actually travel by AIR to the region they plan to visit..

You can easily cross into Mexico, it's the getting back alive that is the problem.
