Learn from someone who knows how to do it.
The techniques used are exacting, and if you don't follow them exactly, you could end up with botulism in your tomatoes and not even know it .. and that is deadly.
Tomatoes are one of the least demanding foods to can, but that doesn't mean you can do it wrong and have the food be safe to eat.

There are thousands of recipes online, and probably at least a dozen for canning tomatoes.

We need more information...
For example, do you want to can JUST the tomatoes, or do you want to make stewed tomatoes? The "recipes" will be very different.

Make sure you have all the right equipment. Make sure you follow the directions PERFECTLY Canning is not something that you can or should do halfa55ed.

Truly. Practically any plump tomatoes are useful for canning. As has been stated, the Roma assortments and plum assortments are ideal, as they have more 'meat' and less open inside or fluid — yet canning any tomatoes is superior to no tomatoes.

OR get a canning booklet from Kerr or Ball jar company.
ALSO your local county extension agent will also have lots of information on how to can lots of fruits and veggies.
