Can modern (solar electric) Catamaran's sink in storms?
But they're catamarans... how can they tip over?

Catamarans are famously known for being among the least likely sea vessels to tip over. The only catamarans known to date to tip over have been of the very light weight sports variety.

A cat (or tri) can be capsized with enough wind & wave combined. A power cat is very unlikely to go over - no mast & sail to provide a lever. However they virtually never sink. Due to construction materials used & no need for a heavy keel they actually have positive buoyancy when filled with water.
Which would you rather be on a boat that can capsize that cant be uprighted without help but floats or a monohull that will probably self right if capsized but if badly holed will sink in minutes? I will add that quite a few monos disappear at sea each year. A collision with a semi submerged shipping container can rip the keel off & hole the hull so badly that it goes down. At least with a multi the probability is that it will still float & give you a chance of rescue.

There is no such thing as an indestructible boat

Sure. It just requires breaking the number one rule of successful boating: water stays *outside* the boat.

"How can they tip over?"
The catamaran is a bi-stable vessel. In fact it is probably even happier when it is inverted than when it is properly sailing. They do not capsize easily, but once one does it's a tremendous effort to get it right side up again. Kind of an anti-kayak.

Of course it can. Rogue wave hits it, it tips over takes on water and down she goes. Captain hits rocks or an iceberg or something which is actually more common than you think they hit a submerged shipping container, blows a hole in the hull and she could sink.
No boat is unsinkable, just ask the crew and passengers of the Titanic.
The only thing that distinguishes a solar catamaran is the source of the energy used to power the vessel. After that it's just another boat and subject to the rules of physics.

That's like saying can a self-driving car still break down. Of course it ******* can.
