Which of the following herbs would go best in scrambled eggs?

Tarragon

Sage

Thyme

Would any of them not mix well at all?

    Thyme would go the best in scrambled eggs, The other two are quite strong flavored, finely chopped chives are good too, or scallions.

    I use thyme. Don't have any tarragon. Sage in eggs, no.

    Tarragon, sage, "Italian spices" (which is a mix of almost everything savoury).

    that all depends on what YOU like.

    Try them...don't depend on what others tell you. THEY don't have your tastes.

    Tarragon would be my first choice. It is common to use it with eggs and fish.

    Thyme would be my second choice.

    Sage is a bit strong for scrambled eggs unless you are going to add a breakfast sausage and if that is the case sage would work Sage is commonly used in breakfast sausage, poultry and stuffing.
