I heated up 1/4 cup of skim milk in my microwave with the power set at10. it turned lumpy with thin watery milk. What hapened?

    I bet the milk was starting to turn.

    Heating milk that is almost spoiled will cause it to curdle.

    The increased acid in the milk and the heating does what you do deliberately when you add lemon juice or vinegar to hot milk, you end up with ricotta cheese. Or in the case of live yogurt cultures you end up with yogurt.

      Heating fresh milk too much, causing parts of to solidify, is called "scorching" it.

    You scorched it.

    Milk needs lower heat, and to be stirred during heating.
