Making Banana bread. When are bananas too ripe to use even for banana bread?

Never. Use them black and liquidy! It's fine.
To be honest I used them fermented once. They were awesome.

When they are as brown on the inside as they are on the outside.

If they are moldy I would not use them.
the riper they are the sweeter they will be.

If they're moldy (fuzzy) or alcoholic (fizzy). Otherwise there's no such thing as too ripe, just stronger flavored.
