Do you think planet Earth is going to make it much longer?
I have a feeling that Earth will be able to sustain life for another thousand or so years, maybe a little bit longer, but then the world will start to end because of pollution, water wastage, and over consumption. For some reason, I feel like we're at our peak and after the next few years, the earth will just start to decline from here on and things will start to get worse gradually.
What do you think Earth will look like in the next thousand or so years?

The Earth will be fine. The biosphere will recover from the current extinction event. Surviving humans will return to the trees.

The Earth will be just fine. It can sustain life even with all the stuff we are doing, because as soon as we destroy our civilization through pollution or war or disease, everything else will recover very quickly.

The planet will be able to sustain life for at least several hundred millions of years more. That is unlikely to include humans, is all.

You didn't mention global warming. Runaway irreversible warming in the next 200 years is now the likely future of the planet. Humans are likely to survive this but in much reduced numbers and not at our current level of civilization.
The Earth itself will be around for several more billion years.

The planet will still be here long after we have gone the way of the dinosaur. The History or the Discovery Channel had a series called "Life After people". In 1000 years most of our concrete buildings will be piles of rubble, the last ones to remain will be the pyramids of Egypt.
