Why does "all together" spell separate?
It doesn't always, and the two spellings have different meanings.
Unfortunately there's an american fad to put spaces where they don't belong, leading to writings like:
a sex partner (as if a partner can be sex)
over populating (as if we stopped)
to race mix

Altogether has been separated as "all together".

Altogether is an adverb meaning entirely, all told, or on the whole. It doesn’t function in any other way. The two-word all together is the appropriate phrase wherever the adverbial altogether wouldn’t work.
