Why are reality shows so popular even though they are a load of rubbish.?

They are unpredictable. They offer something we have not seen before. They are based on people's character more than on script. We see genuine people's reactions on different occasions.

Because they're cheap. That means as a producer, you can crank out a dozen of these shows for the cost of one scripted show. You can throw them in front of the public and see if one hits...if not, you can scrap them and try again for almost no cost. The turnaround on scripted shows is slower and costlier.
So when you get someone that is the right blend of outrageous, you may have gone through 20 bad shows to get that one hit, but the hit makes it ALL worth it.

I suppose it is the same reason pop music is so popular: accessibility.
Pop music is made with predictable and simple chords, as well as simple rhythms, and since there is nothing complex about the music, it is the most accessible.
On the other side of the spectrum, we have jazz and classical music, which go out of their way to have complicated rhythms, multiple keys, exotic chords, and this makes it much less accessible to the general audience who are not used to or do not understand the appeal of such music.
To oversimplify it, usually music nerds are the ones who like jazz/classical, whereas people who are not nearly as interested in music are happy with the simplicity and samey sounds they get from pop music.
The same thing applies to T.V. shows. A high-budget show with a deep, captivating story may not be easy for everyone to understand or follow because it takes more investment and maybe even some prior knowledge, such as a show about U.S. law. As well, deeper shows such as this may have important continuity, so the audience won't be able to just put on any episode and understand the story/enjoy it. This makes it less accessible to the general audience.
Reality T.V., on the other hand, is typically about the most simple and relatable things known to man: arguing/drama. They also may not have much important continuity, so they can be watched out of order. Very little prior knowledge is required, and it can be understood by the highest amount of people, so it is highly accessible.
Perhaps low quality, but definitely high accessibility makes things popular.

The American public is easily brainwashed and has been so for many years. Thus, media convinces people that they're watching what most American's want to see.
