    If you find the taste to be boring, try adding mustard seed, black pepper, coriander seed or cloves.  These are the most common corned beef spices.  I like to Allspice too. Crush berries or ground works great with corned beef.  My secret for cooking corned beef is roasting with leftover pickle juice instead of beer in the bottom of the roasting pan.

    If your issue is corned beef is too salty, then rub the meat with brown sugar before cooking.  Let it rest and partially dissolve before cooking. You should allow the meet to warm to cool room temperature (12-16C) before cooking, so just rub the brown sugar on when you take it out of the fridge.

      @ Brian just to add to your fine suggestion,a rinse,and cold water soak will also reduce salt

    Corned beef hash is the best way I think- just dice and cook potatoes, add browned onions and thyme, chop and fold in the corned beef. Either serve it as a crispy brunch fry with a fried egg on top, or make a pastry pie or folded pasty filling, really tasty

    If your cooking it from 'scratch', Find a good marinade and / or rub [try google for recipes], and cook it low + slow. if you can, smoking it can add a really good flavour.

    Having sliced [cold] in a 'Reuben' sandwich, with some sauerkraut or pickled onions.

    If eaten cold then horseradish, mustard, pickles, lettuce leaves.

    Cut into cubes eat with salad cream and boiled eggs, spring onion and lettuce.If heated then corned beef hash with potato, or fried. Add chilli or smoked paprika. Cut into cubes serve with boiled eggs cut up.

    If you don't like it, you just don't. It's a strong, distinct flavor, and nothing is really going to hide it.
