Is your gf living with you? If she is then the **** has a point. If she isn't then why does this bother you so much. Just follow the rules and tell the landlord if the neighbor is incorrect. If you are telling the truth then this shouldn't cause a problem.

Because everyone wants to be treated fairly and be subject to the same rules. It is not fair for you to break the rules that the rest of the residents must adhere to as well. In addition, your unapproved roommate likely has not been given a background check like everyone else so she could be a drug addict axe murdering child molester, and most people don't want one as a neighbor.

They can't mind their own business because they're nosy and maybe they can't think of anything else to do to entertain them selves other than observe other people and create drama wherever they can.
If there's a term in your lease stating no one else can live there and you cannot have over night guests you're violating the lease terms by having your girlfriend live there and that can lead to you getting evicted. You need to handle this situation calmly and maturely. How you do that is contact the landlord and inform them about her being there and see if you can work something out with them. The reason they need to know who is living there is not just because they're nosy and barging in to your life they need to know for insurance and safety reasons; if something should happen, like the building is on fire for example, they want to know who's there so they can be accounted for.
They may or may not want to raise rent. Whatever they request if it's more than her name work with them, give them the info they want. You don't want an eviction on your record. It goes on your background and credit check for 7 years and you'll have a hard time with anything that requires credit and it will give you a hard time finding another place to live.
Technically if she's staying there over night more than 2 nights in a row and has belongings there, like clothes for example, she lives there. Do the right thing. Try to work it out and avoid getting evicted.

If you are in violation of your lease...thats why. They dont want to see someone establish tenancy then need to be evicted...all while causing problems for the building/complex.
If you are doing something wrong, its tough to argue that its someone else's fault for reporting you...

Is she living with you and not on the lease, so that you are violating your lease? Any tenant has the right to question their landlord regarding things they see other tenants doing. What if a neighbor would like to move someone in with them but their lease prohibits it, and they see you doing it and getting away with it? At that point, it becomes their business. The landlord can tell them that it's none of their business, and then, it is none of their business.

Could there be something else; like maybe your girlfriend's car taking up an extra parking spot, or you two being loud at night?
Tenants tend to be very self-policing. Sometimes that's for the best and sometimes it's for the worst. If you want the luxury of avoiding such issues then work towards getting a house of your own, rather than an apartment that comes with a lot of rules.

If your gf is not on the lease or registered with the landlord, then you should be called on it, for the protection of all of the tenants in the building. The landlord should be informed so that he can run a background check. Never mind the neighbor's behavior. It sounds like yours is the one that is questionable.
