What if you start dating someone then your parents divorce and it turns out the parent you're staying with marries your girlfriend's parent?

Did they actually get married? If so, she is your step-sister which you both shouldn't be dating and should break-up. You shouldn't be dating your sister, yes she's not blood but she is legally considered your step-sister. My husband when he was a kid had a crush on this girl and they were seeing each other, later on after their parents broke up, his dad and the girls mom started dating and they are still together to this day.
If they aren't married.....it's really up to you but if they are going to be together for a very long time, it's still like dating your step-sister.

Well it might be awkward but there is no law that says you can't date the child of someone who is dating your parent.
As long as there is no shared blood line and you are all above the age of consent there is no legal issue.
