Because that is Peter's nickname like Matt is the nickname of Matthew, Chris is the nickname of Christopher, Nick is the nickname of Nicholas, etc.

People have a habit of shortening names, thinking it's friendly to do so. Just tell them you prefer to be called Peter.

Pete is a nickname for Peter.  If you don't like people calling you that you can let them know right away when you meet them.  Introduce your self by saying something like "My name is Peter, I don't really like being called Pete, so if you don't mind, please call me Peter."
