What do you think of eggplant lasagna?

    Very nice, its like 'Moussaka'.

    It would probably be just like eggplant parm but with noodles and regatta cheese!

    It's OK, but salt and rinse it to get rid of the bitter flavor. I do better with zucchini. I peel it then cut it into planks on a mandoline. Give it a ride in the oven to dry it out, then use like lasagna noodles. Even my grandkids like it.

    Delish, I would smoke the eggplant before adding it to the Lasagna.

    To smoke, pinch with a fork and cook directly in a pan until burnt edges appear.

    Any vegetable that is "NO, you just gotta cook it right" should be left for the pigs. I've actually eaten eggplant and liked it OK. I still don't see the point, though.

    Its gross.  Lasagna should have hamburger, italian sausage and lots of cheese in it

    I don't like eggplant. Many people overcook it and it ends up with a slimy texture.

    • Same here. I've never had eggplant. I wouldn't want eggplant. It sounds nasty.
