How come in some stores you can't record?

Even though there recording us with the security cameras.

    Many stores are on Private property, which means the landowner can make and enforce their own laws when you are on their property. Beware in mind: when you take a video or picture and are asked to stop you have to as you could be arrested and charged with trespassing but without a court order no one can force you to delete anything (by law). If you're on public property, you can film/picture anything or anyone you see (even if you zoomed into the private property), no one including the police has the right to force you to stop taking pictures or filming, and again can't force you to delete them. 

    They can request you stop but not law says they can force you

    Again, it is because stores are private property

    and the proprietors set the rules.

    The bigger stores put a lot of time, effort and money into developing a style or a brand. Obviously they can't stop competitors coming into the store, but they don't have to make things easy for them. It's not just a case of seeing what looks pretty - recording things like people's reactions and "dwell times" are valuable data.

    Because their property, their rules. When you go to someone else's property, you are never guaranteed or even offered to do the same things the property owner does on that property. I mean, do you allow anyone and everyone who comes into your home to rummage through all your drawers or do even half the things you do in your home?  Of course not.  And if they don't like it, they can leave. The same goes for you and those stores, so if you don't like their rules, then don't go to their property.
