Can a smoke detector be modified to just play music automatically instead of sounding an alarm when fire is detected?

No, or not in any practical way for a "self contained" one.

The permanently-wired type used to connect with an overall alarm system could equally be used to switch just about anything. They typically operate on 12V and just switch a relay contact when triggered.

    eg. https://www.texe.com/uk/uploads/Exodus_Series_LIT-...

That can switch any small 12V load up to 50mA, or operate a small 12V relay to switch a high powered load on or off.

(The output is normally ON and switches OFF if smoke is detected; use a small 12V relay and the normally closed contact on that to turn an item on when smoke is detected).

A typical alarm system also just switches a 12V supply to the bell(s) or sounder(s), so likewise that could be used to trigger any other 12V device or relay.

It can but it would make the sound seem less urgent and would not be taken as seriously.  It would however be a nice melody to die to if in fact there is no escape
