Why are my chocolate chip cookies always chewy?
I’ve even tried recipes that say they’re crispy. But they’re not. I’ve tried leaving them in the oven for longer. I’ve tried using shortening instead of butter. They’re always chewy.

Do you let them cool down on a rack (where the air can get under them as well)
or do you leave them on the baking tray to cool down ?
It does make a difference.

You don't leave them in long enough. Mine always come out hard as rock.

Who wants crispy cookies? Yuck! Cookies are supposed to be soft and chewy.

Might be nothing more than using Butter or Crisco.

I just looked it up, apparently white sugar and egg white only will give a crispy cookie texture where the egg yolks would make them chewy so just use the white of egg, also it mentions you can rebake them for a crispy effect
