I have a degree in Systems Management, which turns out to be about project management.  As products are developed by projects, you might look to see if you can find a similar course at some school.  Classes you'd be looking at are in:  queuing theory, logistics, organizational design, quality assurance, organizational psychology, simplex and other optimization models, project planning, and several others.

You don't need a product specific education, in fact that would unduly narrow your scope of expertise and make being hired after graduation more problematic.
