What will happen if all the oceans on Earth suddenly dry up?

Wouldn't happen suddenly, but would stretch over many, many years.  Maybe there would be time to do something about it if this did start to happen.

The water would go into the air then it would rain like hell and there would be a global flood.

There's no telling, because if that was to happen, everything we know about science and causality would go right out the window. If IMPOSSIBLE events start taking place, then it's Anything Can Happen Day.

Somewhere there will be an awful lot of water that was once dry.  Here though? famine, death, extinctions.

That water does have to go somewhere and there is one heck of a lot of it, so it won't happen all that fast.
