why is food so bad in boarding schools, even expensive ones?

My grandmother was a school cook - cooking and keeping food ready for service to several hundred diners is the perfect way to ruin food and they have to pare down recipes to the minimum to keep costs under control, especially if the catering is not subsidized as it in some sectors.

Because it's the biggest expenditure, so it's where they try to cut costs the most, except in the expensive ones, which are always, always, always the oldest ones where the biggest expenditure is heat because they're so old and big and drafty and don't have an ounce of insulation in them, so kids in expensive boarding schools have the added bonus of not just eating crappy food but also freezing their little balls or little boobies off, depending, as expensive boarding schools have to cut costs both places because their heat bills are so extremely massive that if they don't, they'll go under.
