Coffee beans don't dissolve so what exactly is instant coffee?

Please don't just say they're freeze dried.

Update 2:

So when Nescafe claim there is 43 beans in every cup, technically they are lying?

Coffee that has been brewed from ground up coffee beans, then dehydrated, resulting in a solid which is granulated and packaged

Coffee as in coffee beans or grounded coffee beans don't dissolve in water. You can make an extract from it with hot water, but it will not really “dissolve”. When preparing instant coffee, granules of coffee are mixed with hot water.

The roasted beans are finely ground and exposed to pressurized hot water to produce coffee which is concentrated by either evaporation or freeze drying to produce powdered or crystalized coffee concentrate.

Freeze-dried and ground *extremely fine*. They do dissolve (Turkish coffee) but at a microscopic size. How could we possibly count them? I don't know how many individual beans there are but there are beans!

First they roast and grind coffee beans, they then make strong coffee, then that coffee is processed to remove the water.

Crushed coffee beans are brewed, then dehydrated and sold as granules.
